The Coffee Drinks

From the austere single shot to the baroque layered showpiece — every drink begins with the same two ingredients: ground coffee and water. What varies is ratio, temperature, technique, and what you add.

Espresso

The foundation of modern café culture. Roughly 7–9g of finely ground coffee, forced through by 9 bars of pressure and near-boiling water in 25–30 seconds. The result is 30ml of concentrated liquid with a foam cap called crema — a colloidal suspension of oils and CO₂ that signals a fresh, well-extracted shot.

Ristretto

A "restricted" espresso — same dose, same pressure, but only 15ml of water pulled through. Sweeter and more syrupy than a standard shot, with less bitterness. The first half of extraction captures the most soluble, aromatic compounds. Ristretto devotees argue it is the truest expression of a bean's character.

Lungo

Opposite of a ristretto — more water, longer pull. Around 60–90ml extracted slowly through the same puck. More bitter and less intense, with compounds that only emerge late in extraction. Common in Northern Europe where strong, long coffee is traditional. Not quite an Americano, as the water passes through the grounds rather than being added after.

Americano

Espresso diluted with hot water — not pulled long, but extended after brewing. The ratio is typically 1:3 to 1:5 espresso to water. Legend holds WWII American soldiers in Europe missed their drip coffee and requested diluted espresso. The crema disperses but the flavour remains more complex than filter coffee.

Cappuccino

The classic Italian morning drink — equal thirds espresso, steamed milk, and microfoam. The foam must be dense enough to hold a pattern but light enough to meld with the milk below. Traditionally no larger than 180ml; anything bigger is no longer a cappuccino in the Italian tradition. Dry cappuccino has more foam; wet has more steamed milk.

Flat White

Originating in Australia or New Zealand (both claim it, fiercely), the flat white uses a ristretto double shot with a smaller volume of velvety microfoam than a latte — usually 130–150ml. The higher coffee-to-milk ratio makes it stronger. The milk texture is thinner than a cappuccino, allowing the coffee to dominate while maintaining silkiness.

Latte

Caffè latte — coffee with milk. Italy invented it; the world ran with it. The modern café latte is a double espresso with 150–200ml of steamed whole milk, topped with a thin layer of microfoam. Macchiato

Espresso stained with milk — the word means "marked" in Italian. A traditional macchiato is a single or double shot with just a spoonful of foamed milk, maintaining the intensity of espresso while softening its edge. Distinct from the Starbucks "macchiato" (an inverted latte). The Latte Macchiato reverses the formula: steamed milk marked with espresso poured through the foam.

Mocha

Named after the Yemeni port city of Mokha — an ancient trading hub where coffee and cocoa flavours were first paired. A mocha combines espresso, steamed milk, and chocolate syrup or powder, finished with whipped cream. The balance of bitter coffee against sweet chocolate has made it the gateway for new coffee drinkers. Mocha originates from Yemen's naturally chocolatey Yemeni coffee varietals.

Cortado

Spanish for "cut" — espresso cut with an equal amount of warm milk to reduce acidity. Popular in Spain and Latin America, the cortado is served in a small glass, roughly 60–90ml total. Unlike a cappuccino, there is minimal foam. The milk is steamed but not aerated into microfoam. A contemplative, precise drink that respects the espresso while civilising its edge.

Cold Brew

Iced caramel coffee drinks with whipped cream

Ground coffee steeped in cold or room-temperature water for 12–24 hours. No heat means a fundamentally different extraction: less acidity, less bitterness, a naturally sweet and full-bodied result. Cold brew concentrate (1:4 coffee to water) is diluted before serving. Not to be confused with iced coffee, which is hot-brewed coffee poured over ice. Cold brew retains freshness refrigerated for up to 2 weeks.

Nitro Cold Brew

Cold brew coffee infused with nitrogen gas under pressure and poured through a stout tap. The nitrogen creates a cascading, creamy effect similar to a Guinness pour. The result is velvety, almost silky in texture with a persistent foam head. Nitrogen dissolves differently than CO₂ — it forms smaller bubbles that amplify the perceived sweetness without adding any sugar. Popularised by Stumptown Coffee in 2013.

Vietnamese Egg Coffee

Cà phê trứng — invented in Hanoi in 1946 when milk was scarce. Egg yolks are whisked with sweetened condensed milk until thick and custardy, then spooned atop a dense Vietnamese drip coffee. The yolk foam floats on the bitter brew below, creating a contrast between rich sweetness and deep coffee. Best drunk with a spoon, mixing each sip. Giảng Café in Hanoi is credited with the invention.

Turkish Coffee

Turkish coffee poured from a copper cezve into an ornate floral cup

One of the oldest preparations still in daily use. Ultra-fine ground coffee — almost powdery — is simmered with water (and usually sugar) in a small long-handled pot called a cezve. It is heated until a foam rises, poured before the grounds settle. The result is thick, unfiltered, intensely flavoured. UNESCO recognised Turkish coffee culture as Intangible Cultural Heritage in 2013. The grounds left in the cup are used for fortune-telling.

Dalgona Coffee

Whipped instant coffee — two tablespoons each of instant coffee, sugar, and boiling water beaten vigorously until thick and fluffy, then spooned over iced or hot milk. Popularised globally during 2020 lockdowns via social media. Its origins are older: a similar drink called phenti hui exists in India, and South Korean actor Jung Il-woo sampled a version in Macau that inspired the name (after a Korean honeycomb toffee).

Affogato

Italian for "drowned" — a scoop of vanilla gelato or ice cream "drowned" in a single or double shot of hot espresso. Simultaneously a coffee drink and a dessert. The espresso melts the edges of the gelato, creating a warm-cold contrast and a sauce that blends the bitter shot with sweet cream. Simple, devastating, and impossible to improve. Best eaten quickly before the gelato fully melts.

Brewing Methods

Every brewing method is a theory of extraction — a particular answer to the question of how water should contact coffee, at what temperature, for how long, and through what filter. Each produces a fundamentally different cup.

Espresso Machine

The modern espresso machine forces near-boiling pressurised water through a compacted puck of finely ground coffee. Originally invented by Angelo Moriondo in Turin in 1884 and commercially refined by Luigi Bezzera in 1901. Modern machines maintain 9 bars of pressure (approximately 130 PSI) — the sweet spot identified after decades of experimentation. A well-pulled shot has three layers: heart (dark, dense), body (reddish-brown), and crema (golden foam).

V60 Pour-Over

Designed by Hario in Japan in 2004, the V60 is a conical dripper with a 60° angle (hence the name), spiral ribs inside the cone, and a large single hole at the bottom. A paper filter sits inside. Water is poured in controlled spirals over the coffee bed — starting with a 30-second bloom to degas CO₂, then multiple slow pours. The result is extraordinarily clean and bright, highlighting a coffee's high notes: florals, fruits, delicate acidity. A favourite for single-origin pour-overs.

03

French Press (Cafetière)

Patented in France in 1929, the French press is full-immersion brewing: coarse ground coffee steeps in hot water for 4 minutes before a metal mesh plunger is pressed to separate grounds from liquid. No paper filter means the coffee retains its oils — the result is heavy, full-bodied, and slightly textured with fine sediment. The oils contribute to both flavour complexity and, notably, raised LDL cholesterol (the one brew method with measurable health tradeoffs). A democratic, low-equipment method beloved for its simplicity.

Chemex

Invented by chemist Peter Schlumbohm in 1941 and permanently in the MoMA collection, the Chemex is a single piece of borosilicate glass with an hourglass shape and a wooden collar. Its proprietary filters are 20–30% heavier than standard paper — they remove more oils and fines, producing an exceptionally clear, crisp, almost tea-like cup. The slower flow rate extends contact time and produces a clean sweetness. Pour in concentric circles; never let the filter touch the glass wall. One of the most beautiful objects in kitchen design.

AeroPress

Invented by Aerobie engineer Alan Adler in 2005, the AeroPress was initially dismissed as a gimmick. It is now one of the world's most versatile and beloved brewing tools. A plastic cylinder and plunger use gentle air pressure to push water through ground coffee in 1–2 minutes. Unlike espresso's 9 bars, AeroPress operates at 0.35–0.75 bar — enough to accelerate extraction without bitterness. The World AeroPress Championship (held annually since 2008) draws competitors exploring hundreds of exotic recipes. Compact and indestructible — the choice of travelers and outdoor enthusiasts.

Moka Pot (Stovetop)

Designed by Alfonso Bialetti in 1933, the Moka Pot is Italy in an object. Water in the bottom chamber heats and steam pressure forces water upward through packed ground coffee into the upper chamber. It operates at roughly 1–2 bar — nowhere near espresso — but produces a concentrated, intense brew that mimics espresso's character. The distinctive octagonal design of the Bialetti Moka Express has not changed since 1933. An estimated 90% of Italian homes own one. The gurgling sound of a Moka pot finishing its brew is a sonic emblem of Italian domestic life.

Siphon (Vacuum Pot)

Equal parts science experiment and theater. A siphon brewer uses two glass chambers connected by a tube. Water in the lower chamber heats and vapour pressure forces it upward into the upper chamber containing the ground coffee. When heat is removed, cooling creates a partial vacuum that draws the brewed coffee back down through a filter. The process is precise, temperature-stable, and produces a remarkably clean, delicate cup. Popular in specialty cafés as a table-side performance brew. Invented in the 1830s in Germany; refined and popularised in Japan by Hario and Kono.

Vietnamese Phin Filter

A small stainless steel drip filter that sits directly over the cup. Coarsely ground Robusta coffee is placed inside and a perforated press plate is set on top. Hot water is added and the coffee drips slowly — 4–5 minutes — directly into the glass. Often served over sweetened condensed milk and ice (cà phê sữa đá). The slow drip concentrates the brew; the Robusta base gives high caffeine and a bold, earthy, slightly chocolatey character unlike most Arabica preparations. Deeply embedded in Vietnamese daily life.

Cold Brew Immersion

No heat. Coarse-ground coffee is submerged in cold or room-temperature water for 12–24 hours in a container — anything from a jar to a purpose-built cold brew tower. Time replaces temperature as the extraction mechanism. Cold water extracts fewer of the volatile acids and bitter compounds that heat dissolves rapidly, producing a naturally sweet, low-acid concentrate. Diluted 1:1 to 1:3 before serving. The steep can happen in the refrigerator (slower, 18–24 hours) or at room temperature (faster, 12–14 hours). The concentrate keeps refrigerated for up to two weeks.

Drip Machine (Batch Brew)

The workhorse of office kitchens and American households. Hot water is pumped over a flat or cone bed of medium-ground coffee in a paper filter basket, dripping through into a carafe. Quality varies enormously: a poor machine brews at inconsistent temperature (below 90°C extracts underextracted, sour coffee). The Specialty Coffee Association certifies machines that brew at 90–96°C with proper saturation and 4–8 minute brew cycles. A properly calibrated batch brewer is a serious, low-labor production tool — many specialty cafés use SCA-certified batch brewers for their filter coffee program.

The Coffee Belt

Coffee grows in a band around the equator between the Tropics of Cancer and Capricorn — the "Coffee Belt." Altitude, rainfall, soil, and processing method all sculpt the cup. These are the world's defining origins.

Ethiopia

The birthplace of coffee. Coffea arabica is indigenous here, growing wild in forests. Ethiopian coffee has extraordinary genetic diversity — hundreds of heirloom varieties called "landraces." Yirgacheffe is celebrated for its jasmine florals and bright citrus. Sidama produces berry and stone fruit. Harrar is dry-processed with intense blueberry and wine notes. Ethiopia is unique: in many rural areas, coffee still grows wild and is foraged rather than farmed.

Colombia

The world's most recognised coffee brand by country. The Andes mountain range creates multiple microclimates with two annual harvests in many regions. Huila in the south produces fruity, complex coffees; Nariño grows at extreme altitude (2,300m+) for intense clarity; Antioquia delivers consistent, balanced cups. The classic Colombian profile — caramel, red apple, gentle acidity — made it the international benchmark for quality Arabica through the 20th century.

Brazil

The world's largest coffee producer by volume, accounting for roughly 40% of global supply. Brazilian topography is mostly low-altitude plateau — unusual for specialty coffee — but the sheer scale and diversity of the country allows for pockets of exceptional production. The Cerrado Mineiro and Sul de Minas regions produce chocolatey, nutty, low-acid coffees ideal for espresso blends. Natural processing is common, adding sweetness and body. Santos is the traditional export grade. Brazil also dominates the Robusta market through Espírito Santo.

Yemen

Yemen is the oldest cultivated coffee origin — trade from Yemeni ports began in the 15th century. The ancient city of Mokha gave coffee its trading name. Yemeni coffee is grown in ancient terraced fields with minimal water — the beans are naturally sun-dried on the plant and in the fruit, producing intense, complex cups. Flavour profiles feature dark chocolate, tamarind, spiced fruit, and distinctive earthiness. Ongoing conflict has devastated production, but Yemen's genetic heritage and unique processing make surviving lots extraordinarily precious.

Jamaica — Blue Mountain

Jamaica Blue Mountain is among the world's most expensive and protected coffees. Grown in the Blue Mountains above Kingston at 1,500–2,250m, the high altitude and cool, misty climate produce an exceptionally slow maturation. The result is a cup of rare balance: mild, sweet, with almost no bitterness and subtle chocolate and floral notes. Japan purchases roughly 80% of all Blue Mountain production. The cylindrical wooden barrel in which it is exported is as iconic as the coffee itself. Protected designation of origin since 1948.

Indonesia (Sumatra, Java, Sulawesi)

Indonesia's fragmented archipelago produces some of the world's most distinctive coffees through wet-hulling (giling basah) — a unique local processing method where the parchment is removed before the bean is fully dried. This creates the characteristic earthy, herbal, full-bodied profile of Sumatran Mandheling and Lintong. Java's coffees (the origin of the word "java") tend to be cleaner and earthier. Sulawesi Toraja is complex with dark fruit and cedar. Kopi Luwak — coffee harvested from civet cat droppings — originated here.

Kenya

Kenyan coffee is a favourite among specialty roasters for its electric, almost shocking brightness and complexity. The SL-28 and SL-34 varietals — developed by Scott Laboratories in the 1930s for drought resistance — produce extraordinary cups. Expect blackcurrant, tomato, grapefruit, and savoury notes alongside intense acidity. The "double-wash" fermentation process used by Kenyan washing stations adds to the clarity and vibrance. Kenya AA is the top grade by bean size. Nyeri, Kirinyaga, and Murang'a are the finest growing districts.

Guatemala

Guatemala's eight distinct coffee regions each have their own character — volcanic soil, Pacific sea-breeze influence, and altitude produce coffees of remarkable complexity. Antigua, the most famous region, grows in a high valley surrounded by three volcanoes whose ash enriches the soil. Huehuetenango in the northwest reaches extreme altitude and produces intense fruit and chocolate notes. Guatemalan Arabica is prized for its spice, body, and gentle sweetness. Most production is washed; natural processing is growing among specialty producers.

Vietnam

Vietnam is the world's second-largest coffee producer and the dominant Robusta producer globally. Robusta (Coffea canephora) contains nearly double the caffeine of Arabica, has a stronger, more bitter, earthier profile, and is used extensively in instant coffee and espresso blends for body and crema. The Central Highlands around Buôn Ma Thuột are the heart of production. Vietnamese coffee culture — strong, sweet, and often iced — has shaped a distinctive national identity around Robusta rather than treating it as inferior to Arabica.

Hawaii — Kona

Grown on the slopes of Mauna Loa and Hualalai volcanoes on the Big Island, Kona coffee is the only commercially grown coffee in the United States. The coffee belt runs along the western slope where morning sun, afternoon cloud cover, and volcanic soil create ideal conditions. Genuine Kona is rare and expensive — "Kona blends" must be at least 10% Kona by law but can be labelled deceptively. Pure Kona is smooth, medium-bodied, with macadamia nut, tropical fruit, and mild acidity. The region produces only about 2.7 million kg annually.

India — Monsoon Malabar

India produces both Arabica and Robusta, primarily in Karnataka, Kerala, and Tamil Nadu. Its most distinctive product is Monsoon Malabar: green beans are exposed to monsoon winds and rain in open warehouses for 12–16 weeks. The beans swell, lose their acidity, and turn pale golden. The result is low-acid, full-bodied, earthy, with notes of spice and chocolate — unlike any other coffee in the world. The process mimics the accidental transformation that occurred during months-long sea voyages before refrigeration, when traders preferred the altered taste.

Panama — Geisha

Panama's Boquete region became globally famous when Hacienda La Esmeralda submitted a Geisha varietal lot at the 2004 Best of Panama competition. It broke every price record and introduced the world to a new flavour archetype: impossibly floral, aromatic as jasmine tea, with stone fruit and citrus transparency unlike any known coffee. Geisha (or Gesha) originates from Ethiopia but thrives at high altitude in Panama. A single pound of the finest Geisha lots has sold for over $1,000 at auction. It redefined what coffee could be.

Chapter IV

Roast Levels

Roasting transforms green, grassy-smelling seeds into the aromatic brown beans we recognise. Temperature and time shape flavour: origin character softens as roast darkens, and roast character takes over.

Light Roast

Roasted to first crack only. The bean's origin character is fully preserved — florals, fruits, bright acidity. Higher acidity, lighter body. No surface oil. Often preferred for pour-over and single-origin brewing. Sometimes called Cinnamon or New England roast.

196–205°C · First crack complete

Medium Roast

Between first and second crack. Balances origin character with roast development. Caramel sweetness emerges; acidity softens; body increases. The most popular commercial roast. American, City, and Breakfast roasts fall here.

210–220°C · Between cracks

Dark Roast

Into second crack. Roast flavours (smoky, bittersweet, dark chocolate) dominate origin character. Surface oil appears. Lower acidity, heavy body. Common for espresso blends and Italian/French-style roasting. Origin complexity largely lost.

225–230°C · Second crack

Very Dark / Espresso

Extended into or past second crack. Very oily surface. Dominant carbonised, smoky, almost burnt notes. Minimal acidity. Strong but one-dimensional. Masks poor-quality beans effectively; can overpower espresso blends. Spanish, Italian, and French-press styles.

Coffee Glossary

The language of coffee is its own dialect. Essential terms used by baristas, roasters, and cuppers.

Arabica
Coffea arabica — the higher-quality species, accounting for ~60% of global production. More complex, aromatic, lower caffeine than Robusta. Grows at altitude.
Robusta
Coffea canephora — hardy, high-yield, high-caffeine. More bitter and earthy. Dominates Vietnam's market and is essential in espresso blends and instant coffee.
Crema
The reddish-golden foam cap on a freshly pulled espresso shot. A colloidal emulsion of coffee oils, water, and CO₂. Indicates freshness and proper extraction.
Bloom
Pre-infusion step in pour-over brewing: a small amount of hot water wets the grounds and allows CO₂ to degas for 30–45 seconds before main pouring begins.
Extraction
The process of dissolving soluble compounds from coffee grounds into water. Under-extraction is sour/thin; over-extraction is bitter/harsh. Ideal is 18–22%.
TDS
Total Dissolved Solids — the percentage of dissolved coffee compounds in the brewed liquid. Measured with a refractometer. Espresso: 8–12%; filter: 1.15–1.45%.
Natural Process
Coffee cherries are dried whole in the sun before milling. The fruit ferments around the bean, contributing sweetness, body, and fruity complexity. Ethiopian Harrar, Brazilian natural.
Washed Process
Fruit is removed immediately after harvest; beans ferment briefly in water, then are washed and dried. Produces cleaner, brighter cups where origin terroir shines through.
Honey Process
A hybrid: fruit skin is removed but some or all of the mucilage (sticky fruit layer) remains on the bean during drying. Yellow, red, and black honey vary by mucilage amount left.
Terroir
Borrowed from wine — the totality of environmental factors (soil composition, altitude, microclimate, humidity) that shape a coffee's character in a specific place.
Single Origin
Coffee from one identified farm, cooperative, region, or country — traceable and distinct. Contrasted with blends that combine origins for consistency.
Cupping
The standardised tasting protocol used globally by coffee professionals. Ground coffee steeped in hot water in identical cups; evaluated for fragrance, aroma, flavour, aftertaste, body, acidity, and balance.
First Crack
During roasting, water inside beans turns to steam and breaks through the cell walls with an audible crack. Marks the beginning of light-roast territory. Around 196°C.
Channeling
When pressurised water finds a path of least resistance through an espresso puck rather than passing evenly. Causes uneven extraction and a compromised shot. Prevented by even tamping.
Dialing In
The iterative process of adjusting grind size, dose, yield, and time to achieve ideal extraction for a specific coffee on a specific machine. Done with each new bag.
